Looking for a fun, different, and easy cook for you and your kids? We got you covered with our recipe for Taquitos! Taquitos, also known as rolled tacos, is a food dish from Mexico that consists of a small tortilla rolled up and filled with beef, cheese, chicken, beans, or pork! You can shallow fry them or just pop them in the oven for a healthier option.

They’re the perfect snack or meal because they’re easy to make, you just need a few ingredients, and they’re versatile with the options of fillings!


Ingredients

1500 grams of beef, chicken, pork, or your desired filling

1 can of beef, chicken, or vegetable broth

½ cup of your desired salsa

1 ½ tablespoon of chili powder

1 teaspoon of garlic powder

½ tablespoon of cumin

1 teaspoon of onion powder

20 corn tortillas

Oil if you decide to fry

Toothpicks


For Serving


Salsa, Sour Cream, Guacamole, Shredded Cheese


Instructions

You can make the meat in either a slow cooker, instant pot, or just cook the chicken with spices as you normally would and shred.


Meat by Slow Cooker: Season your meat with salt and pepper, then add the rest of the spices, minced onion, broth, and salsa. Cook on Low for around 7 hours, or until meat shreds easily. 


Meat by Instant Pot: Season meat with salt and pepper. Cut it into pieces to fit inside the instant pot. Add the spices, minced onion, beef broth, and salsa. Cook on high pressure/manual for 50 minutes, and once finished allow pressure to release for 20 minutes before removing the lid. 


After your meat is cooked, shred it. To assemble, spoon about 2 tablespoons of the meat mixture into a line at one end of a tortilla and tightly roll it up. You can use a toothpick to secure it.


Oven Bake: Preheat your oven to 220. Brush the tops of the tacos lightly with oil. Place them in a basking dish and bake for 15-20 minutes or until the shells are crispy as desired.


Fried: Add about 2 inches of oil to a large skillet on high heat. Fry them in small batches for about 25 seconds on each side until they are golden and crispy on all sides. When done, place them on a plate wrapped in aluminium foil to keep them warm.


Serve taquitos with guacamole, shredded cheese, salsa and sour cream.
